This varietal is a cross of the Typica and Bourbon varieties. The benefit of this variety is the high productivity levels at medium to high elevations as well as a good resistance to diseases. The flavor profile lacks sweetness and can be characterized by a bitter undertone.

Process: WASHED

Washed process is about removing the cherry’s cover from the seed before drying. This approach requires the use of specialized equipment and huge amounts of water.

Washed processed coffees have a lighter and cleaner body with a more refreshing palate than natural processed coffees. But, on the other hand, its brewed coffee usually has greater vibrancy as its clean acidity smoothens coffee aftertaste. On top of that, the coffee taste is still as fruity as its natural bean, whereas the nuances might be distinct.
