This is a mutation of the Bourbon varietal, discovered in Brazil, with high production and good quality. It is a short, but high yielding plant. The cup characteristics of the Caturra variety include a clear acidity with lemony flavour notes, especially at higher elevations.
Process: HONEY
This process comes from both the natural and washed processes. It is an uncommon and difficult procedure because it is not as widely used as the other two. However, it provides a distinct cup of coffee with characteristics comparable to both preceding procedures.
In honey processing, farmers dry the cherry in the sun and then use a pulper to extract the seed from the cherry. Therefore, the mucilage remains with the seed.
The quantity of mucilage left behind determines the sweetness. Technically, there is equipment that manages the amount of mucilage on the seed. Then, the seed is dried out on the bed before scraping and dispersing to prevent fungus
